Yes, obviously running a 2 bar sensor will only allow for a bar of boost. Actually technically it should be set to safety cut within its "ceiling" which means the operational maximum will be something closer to 0.9 bar.
But for mucking about - much easier to just interchange the ECU's and not the map sensors as well.

Yes you can, as long as you don't boost beyond the MAP sensor's limit. All you need to do is recalibrate for the different sensor. The map is written against manifold pressure, not against the raw ADC o/p figures
