I cleaned off the old foam and glue from the cars roof by filling an empty household kitchen trigger spray bottle with acetone, covered all the inside with old sheets for protection, sat in the back seat, squirted a small patch at a time, and it all cleaned off perfectly.

"Stunned Monkey" The hoovering took ages
FWIW the material is "dove grey" headlining from Woolies Trim, and the glue is 3M "Spray 74" foam adhesive (sticks instantly but can be repositioned).
This headlining is quite expensive, but much better quality than the original stuff (and slightly lighter in colour)

Martin did the headlining come with the foam already stuck on it?

Yes and no - it's got 5mm or so of soft backing, yes, but it isn't foam and doesn't disintegrate over time.
I've been using it on DeLoreans for years - highly recommend it.
