How about the wiring? I can't remember off the top of my head whether the 4 connectors have different coloured wires but I expect they do.

They are supposed to have a temp sender for oil as well but I've never seen one fitted .
Oil sender is 60deg ,then the two air @ 90 & 110 .
They should also operate at either 6 or 12 volts depending on temp and switched ignition or not .There is also a extra warning diode for Turbo models to indicate fan failure/overheat 110+ .
It's all listed in the GTA manual C-49 thro C-51 .But that has the oil temp involved .......

You could just short the wiring and see what each pair do .

could be a relay I presume or is it genuinely running hot and it is a fault?

The top wires on the top sensor (both thick wires one black one white) turn the fans on and they both work perfectly.
The top sensor looks fairly new and has the part no 60 01 008 967 which from the parts book looks the correct one for that position. Could not see the bottom sensors part no but with the light coming on I assume it's correct and operational.
The bottom two wires (thinner blue and a black wire) turn on the hot engine bay warning light on the dash with the ignition turned on
So are these the wrong way around?.

I think this is what occurs .... the fans come on and the engine bay fan light illuminates .If it gets above 110 then the STOP light on the dash will light up to indicate fan failure/overheat .
